There are long lenses available for Canon too, their dedicated videocameras are amazing, most of them using S35 sensors, i.e. Now I am a user of Sony gear, but that doesn't mean you cannot do that with other systems. You can film 4K in S35 crop mode with that camera giving you equivalent focal-length of 900mm. Let's assume you are using a Sony full frame e-mount camera, the A1, and a 600mm Lens. So you need to figure out which lenses are available for the camera system you intend to use. I think what you're trying to find is a camera that provides 4K video with the longest equivalent-focal-length or smallest equivalent-field-of-view to film birds far away.
